Mix melted coconut oil and Shakeology to combine. It's useful to do this in a clear 1 cup glass measuring cup if you have one.
Pour about half the mixture evenly into the seven muffin liners, just covering the bottom.
Refrigerate for about 5 minutes to set.
Remove from fridge and add about a teaspoon of peanut butter to each cup, smoothing down but avoiding the edges.
Top each cup with remaining chocolate mixture and place back in the refrigerator for 20 minutes!

Optional: liquid stevia drops can be used to add extra sweetness to the Vegan Chocolate Shakeology + coconut oil mixture
You could also easily use an unlined silicone muffin pan, but for these treats in particular it's kind of fun to have the ridges from the muffin liners so that they're even more like their much more sugary doppelgänger treat!
