Superfood Chocolate Peanut Butter Cups

I’m a chocoholic like so many people, but I’ve been satisfying that craving with a healthy option for the past year and a half now using Shakeology. Basically it’s a powdered superfood blend that gives me an incredibly dense dose of nutrition in a way that tastes like a treat! I mix myself up a superfood “milkshake” nearly every day using unsweetened almond milk, ice, and a variety of other add-ins depending on my mood (current faves are avocado and peanut butter – don’t knock it ’till you try it!!), and while it’s absolutely DELICIOUS, I also won’t say no to an option that lets me eat it like a super indulgent Reese’s Peanut Butter Cup! Bonus: none of the artificial stuff, namely simple sugars that spike insulin and cause my body to store fat. I want it all, the sweets and the health! Well here it is, my friends – a super simple recipe to enjoy the best of both worlds.

I first tried it a couple of weeks ago using my standard Chocolate Shakeology. Bradley, who’s four and my pickiest eater, even enjoyed them! Total MOM WIN! (He’s terrible about eating vegetables, so this made my heart so happy!)

Last night I got the urge to make more, because, well, CHOCOLATE . . . and this time I used Vegan Chocolate Shakeology. I added a few drops of liquid stevia to the chocolate/coconut oil mixture just for kicks. They are SO GOOD. I had one last night and two for breakfast!! Good thing they’re guilt-free :)

Superfood Chocolate Peanut Butter Cups

Ingredients
  • 1/2 cup coconut oil melted
  • 2 scoops/packets Chocolate Shakeology
  • 7 tsp peanut butter divided
Instructions
  1. Place seven muffin liners in a muffin tin.

  2. Mix melted coconut oil and Shakeology to combine. It's useful to do this in a clear 1 cup glass measuring cup if you have one.
  3. Pour about half the mixture evenly into the seven muffin liners, just covering the bottom.

  4. Refrigerate for about 5 minutes to set.
  5. Remove from fridge and add about a teaspoon of peanut butter to each cup, smoothing down but avoiding the edges.
  6. Top each cup with remaining chocolate mixture and place back in the refrigerator for 20 minutes!

Recipe Notes
  • Use Vegan Chocolate Shakeology for vegan, dairy-free
  • Optional: liquid stevia drops can be used to add extra sweetness to the Vegan Chocolate Shakeology + coconut oil mixture
  • You could also easily use an unlined silicone muffin pan, but for these treats in particular it's kind of fun to have the ridges from the muffin liners so that they're even more like their much more sugary doppelgänger treat!
